Today we will make dulce de leche or cajeta or candy / milk jam or all of these together. Besides, in this case the name is immaterial. What matters is the incomparable taste of the irresistible aroma, velvety texture ... I could eat an entire jar only with spoon or just dipping my finger! But not this time because I promised that I will make ice cream (... will follow!). Well, maybe just a little bit to see if I succeeded (the classic excuse principle of food preservation of a chef).
No, look in the closet, but in the fridge. principle of food preservation You will not need sweetened but fresh milk. Cow or goat, better the second. We will need and sugar and maybe a tiny bit of fresh vanilla or cinnamon, though of course we like. I have already explained here and here how we can make dulce de leche boiling sweetened. The comment, however, a friend of how safe is it to boil candy into the metal can for hours, got me thinking and psachtika little longer. The truth is that there are serious concerns about the presence of the compound BPA (bisphenol-A) in the internal protective coating of cans. This substance appears to affect the contents principle of food preservation of the can, even without that warm!
To avoid tiring the above, here is an alternative method principle of food preservation to the build that is almost as simple to boil water and certainly more secure. Okay, to be honest you will need to stir now and then and have our minds and not to stray far from the kitchen for about an hour and not let our eyes in the last half hour but when you see the milk transformed into a thick caramel and our kitchen will smell divine, we are sure it was worth it. Then, if you do not eat with the spoon, we can use it for garnish, dip, filling or base for other desserts such as ice cream, crepes, pancakes, principle of food preservation waffles, croissants, cakes, brownies, cakes, cookies or whatever else put our mind.
(Approx 400g) fresh vanilla pod, about 5cm (optional) 1 liter of fresh whole milk (cow or goat or mixed) 1 cup granulated sugar (200g) 1 small cinnamon stick, about 5cm (optional) teaspoon coarse sea salt (optional) teaspoon baking principle of food preservation soda dissolved in 2 tsp hot water Directions:
1. With a sharp knife rip along the vanilla pod and remove the sporakia. Pour sporakia and empty pods, along with milk, sugar, cinnamon and salt (if used) in a 3 liter pot with a heavy bottom. Heat over medium heat, stirring occasionally, until it begins to boil the milk and dissolve the sugar completely. Remove the pot from the heat and add the dissolved in water baking soda. Mix carefully because the mixture will begin to swell, and to foam, especially if we use goat milk. Once the blisters subsided, return them to the pot on the fire.
2. Reduce the heat source, so that the mixture is simmering, but not boiling. Cook, stirring periodically (every 15 minutes), until the mixture to get a light golden color. It will take about 1 hour.
3. As the mixture begins to thicken principle of food preservation and darken, stir increasingly frequently (every 5 minutes), to avoid sticking to the bottom of the pot. When getting dark caramel color and become principle of food preservation thick texture (almost density sweetened milk), remove from heat. To make sure that it is ready, put 1 tsp candy in a saucer we arrange to put earlier in the freezer. Put the saucer again in the freezer for a minute and check the density of candy. If you have moderate density is ready, if it is too sparse continue principle of food preservation to cook, while if it is too stiff, principle of food preservation add a little hot water to the pot (1 tablespoon at a time) until you obtain the desired density.
4. For a smoother texture pour the caramel through a fine strainer into a sterile, principle of food preservation dry jar. To help it pass, mix with a spoon. If you do not use it immediately, close the jar, once cool, and store in the refrigerator. Store up to 1 month. When you want to use it, the heat in the microwave or in a double boiler until realized. If still seems us very tight, the dilute adding a little hot water.
